Vegetarian Mac And Cheese


A common issue I hear with clients is that they don’t know how to make their favourite dishes healthy and a common issue I hear with my vegetarian clients is that they struggle with high-protein meals. Well, here’s a recipe that tackles two birds with one stone!

So for everyone who grew up with Kraft Mac and Cheese, but wants to be a bit more on the healthier side and also hit their protein, here’s the recipe for you.

INGREDIENTS NEEDED:

  • 500g cottage cheese

  • 150mL almond milk 

  • 60g mozzarella cheese

  • 50g cheddar cheese

  • Onion powder

  • Garlic powder

  • Paprika 

  • Salt and pepper

  • 500g macaroni 

  • Basil

HOW TO MAKE:

  1. In a blender, add your cottage cheese, milk and half your mozzarella. Add in a dash of onion powder, garlic powder, salt and pepper - then blend together.

  2. Add that mixture to a low heat pan, and add the same spices you just used. Stir through your cheddar cheese until it’s all mixed.

  3. Have your macaroni on boil until it’s al dente. 

  4. Take the mixture from the pan and blend again. Add this back into a low heat pan and stir through your macaroni, the remaining mozzarella and sprinkle some paprika in. 

  5. Serve with basil and you’re done!

For some extra flavour, you can always add some breadcrumbs on top and oven-bake for 45 minutes. 

This recipe gives you 517 calories (using the exact ingredients, which you can find on my Instagram, and amounts that I used) with a whopping 30g of protein! Hope you enjoy it!
